Keto Spaghetti Squash Lasagna Boats

What things do I need ?
- • 2 spaghetti squash, in quarters and without seeds
- • 1 pound of kale
- • 1 quarter of tomatoes
- • 1 pound ground beef
- • 1 medium-sized yellow onion, chopped
- • 1 cup garlic, peeled and minced
- • 1/4 cup dried basil
- • 1/4 cup dried oregano
- • 2 tablespoons kosher salt
- • 2 tablespoons red pepper flakes
- • 2 tablespoons ground black pepper
- • 2 cups grated mozzarella cheese, divided
- • 1 cup of cottage cheese, divided
- • 1/4 cup grated Parmesan cheese
- • 1/2 (8 ounces) package of cream cheese
How to do ?
✓ Place 2 pieces of spaghetti squash in a microwave-safe place with the cut sides down. Microwave on high to soft, about 15 minutes. Repeat this with the remaining 2 pieces of spaghetti squash. Scoop the pumpkin from the shells in a large bowl and keep the shells.
✓ Put 1/2 of the cooked pumpkin in a food processor and finely chop. Put the pumpkin back in the bowl and set aside.
✓ Preheat the oven to 500 degrees F (260 degrees C).
✓ Place kale in the food processor and chop finely. Put in a bowl and set aside.
✓ Puree the tomatoes in the food processor. Put in a bowl and set aside.
✓ Heat a large frying pan over medium heat. Cook and stir ground beef, onion and garlic in the hot frying pan until brown and crumbly, 5 to 7 minutes. Add basil, oregano, salt, red pepper flakes and black pepper. Let simmer for 5 minutes.
✓ Add spaghetti squash, kale, tomatoes, tomato puree, 1/2 of the mozzarella, 1/2 of the cottage cheese, Parmesan cheese and cream cheese to the minced meat pan. Reduce the heat to low and simmer until the cheese has melted, about 5 minutes. Remove lasagna sauce from the heat.
✓ Spread 2 tablespoons of cottage cheese in each spaghetti squash. Spoon lasagna sauce in the shells to the top. Freeze or remaining sauce. Top filled shells with remaining mozzarella cheese.
✓ Place filled shells on the middle rack of the preheated oven and bake for 10 minutes. Turn the oven to roast and cook lasagna until the cheese is brown, about 5 minutes more.
